This Java lot comes from Finca El Diviso, one of Colombia’s most progressive producers, known for combining variety selection with innovative processing.
Although the Java variety is named after the Indonesian island of Java, genetic research has identified it as an Ethiopian landrace known as Abyssinia. Java first gained attention for its strong resistance to coffee berry disease and its adaptability to low-input farming systems. It was introduced to Central America in the 1990s, with Panama officially recognizing the variety in 2016. Today, Java is prized for its high-altitude cup quality and agronomic resilience, offering farmers a more accessible and sustainable alternative to Geisha without sacrificing complexity or elegance.
This coffee is processed using CM (Carbonic Maceration), a technique in which whole coffee cherries ferment in a sealed, CO₂-rich environment. The low-oxygen conditions allow for precise fermentation control, enhancing aromatic clarity, sweetness, and structure while maintaining a clean, transparent cup profile.

We roast once a week on Mondays and Tuesdays. Orders placed by Sunday 12:00 PM (noon) will be roasted the following Monday–Tuesday and shipped that week.
